Suki Maman cupcake class at Afisha Eda Food feast (Афиша: Праздник Еды)

In the last post I already said a lot about the Food feast, an amazing food festival organized by Afisha Eda magazine in Moscow last weekend. Now I would like to say more about the master class of Suki Maman (the pastry chef of Upside down cake bakery and Montalto pizza). The class was about mini cupcakes, the key speciality of Upside down cake, which I'm completely addicted to. That was something I just couldn't miss.

Food feast of Afisha Eda (Афиша: Праздник Еды)

I spent this whole Saturday at the Food feast (Праздник Еды) - food festival, organized by Alexey Zimin and Afisha Eda magazine in Moscow for the first time this year. When I found about the event a week or two ago and looked through the agenda I was amazed. All day was filled up with master classes of some of the most interesting Moscow chefs - Ivan Shishkin of Delicatessen restaurant, Isaac Correa, Suki Maman of Upside down cake and Montalto pizza, Iyia Shalev of Ragout etc. as well as Alexey Zimin himself. I new I had to be there whatever happens.

Suki Maman master class in cafe Sok

At the middle of July I noticed that cafe Sok from time to time runs master classes with guest chefs. The upcoming class was going to be about healthy sweets and guess who was the master. It was such a tiny notice "July 24th, Healthy sweets (Suki Maman)", the pastry chef of my favorite Upside down cake. I immediately called the organizer and - yess! - there were still seats available.

Half-a-teaspoon: custards and icings class

I was lucky to make it to the custards and icings class at half-a-teaspoon, which turned out the last one Алена Спирина taught this year. I'm so crazy about custards in general that the topic itself turned me on immediately. I enjoyed the class a lot and got deeply sad I'll have to wait till next autumn for more classes.

Half-a-teaspoon: how to make meringues

This Saturday I enjoyed one more Half-a-teaspoon class. Алена Спирина taught how to make meringues this time. Not that I didn't make them before, but the class turned out very insightful for me. We did the French, Italian and Swiss meringue based desserts and Алена made sure to give a lot of detailed explanations. I never really dug as deep into the meringues before. Маша agreed to that and added that still Алена doesn't believe when told that her classes give a lot of new information.

A different panna cotta (Italian spicy custard)

I came across this dessert when I worked in a Moscow Gastronom cooking studio. For the Italian class the trainer proposed to make two varieties of panna cotta. The first one was a classical jellied sweet cream served with fruits and fruit sauce. The second turned out to be a delicious spicy Italian custard.

Half-a-teaspoon pancake baking class

This Saturday I went to Half-a-teaspoon baking class at last. I found about this project around half a year ago. It's an experimental confectionary shop and creative cooking classes (there are also special classes for kids). We came to the Maslenitsa pancake baking class by Алена Спирина, a Russian food writer and blogger on LiveJornal. She teaches weekly classes in the school.

Pull me up (all time tiramisu)



Tiramisu is my second contribution the Valentine's day celebration. The first was Valentine's sparkling strawberry cocktail I published yesterday. I'm making tiramisu like in those good old times when I was working in a Moscow cooking school organized by Gastronom magazine. I wish once I went back to this job.
